<p>Should mozzarella be served at room temperature?</p>



<p>It&#8217;s not recommended to leave mozzarella out of the fridge.</p>



<p>As it is a fresh soft cheese with relatively high moisture content, it is more susceptible to mold.</p>



<p>Harder cheeses should be removed about an hour before serving, but mozzarella should be kept chilled right up until it is served.&nbsp;&nbsp;</p>

<p>Realistically, the typical mozzarella found in US supermarkets will be stored in water or maybe brine.</p>



<p>So, the advice still stands; unless it is a high quality, high moisture content mozzarella, don&#8217;t serve it at room temperature.</p>

<p>Interestingly, the rind is made up of mold that has been intentionally introduced into the cheese.</p>



<p>A culture known as&nbsp;<em><a href="https://www.sciencedirect.com/topics/pharmacology-toxicology-and-pharmaceutical-science/penicillium-camemberti">Penicillium candidum</a></em>&nbsp;is added during the cheesemaking process to encourage mold to grow and form the rind.</p>

<p>Although we are used to the typical bright white appearance of brie, are there other factors that mean it could be a different color?</p>



<p>Perhaps it is already brown when you buy it, or it changes color as time goes on.</p>



<p>During the cheesemaking process, brie is allowed to age, and this requires specific temperatures and humidity.</p>



<p>The temperature is kept at&nbsp;12 to 15° C, and the humidity at 90 to 94%.</p>



<p>This allows for the perfect ripening to occur between nine and 30 days, creating the desired white mold rind.</p>

<p>You&#8217;re just about to prepare a delicious pizza or salad when you notice that your mozzarella has turned orange! What could have caused this change, and is it still safe to eat orange mozzarella? </p>



<p>While it may appear unusual and unappetizing, it is completely safe to consume.</p>



<p>The orange color is produced by a bacteria called&nbsp;<em><a href="https://www.sciencedirect.com/topics/agricultural-and-biological-sciences/brevibacterium-linens">Brevibacterium linens</a>&nbsp;</em>or<em>&nbsp;B. linens.</em></p>



<p>Although it is a type of mold, this doesn&#8217;t mean the mozzarella is spoiled; you can still consume it.</p>

<p>There might be a slight difference in the taste of orange mozzarella, but it&#8217;s not unpleasant. When used as a pizza topping, any change in flavor is hardly noticeable. </p>



<p>Serving orange mozzarella pizza could even be a fun conversation starter with your guests. Some cheesemakers intentionally add the bacteria, which is available in powdered form. </p>



<p>This bacteria turns the rind orange, giving the cheese a distinctive look. Examples of cheeses with this characteristic include Port Salut and Muenster.</p>



<p>Interestingly, the bacteria responsible for this can also be found on human skin, contributing to foot odor. This is where the phrase &#8220;cheesy feet&#8221; originates.</p>

<p class="has-background" style="background-color:#e99460">In America, cheddar cheese is orange due to annatto, a natural food coloring from the achiote tree seeds, added to achieve a consistent color year-round. This tradition mimics the natural hue from cows&#8217; milk high in beta-carotene from spring grass, historically signifying quality. The use of annatto ensures uniformity across production, without altering taste or texture.</p>



<h2 class="wp-block-heading has-text-align-center">Can a Cow’s Diet Turn Cheddar Cheese Orange?</h2>



<p>Indeed, the coloration of cheddar cheese originates from what cows eat. The history of cheddar cheese dates back to the 12th century in the village of Cheddar in England.</p>



<p>By the 17th century, even cheddar cheese produced in England exhibited an orange hue. This is attributed to the cows&#8217; diet of fresh spring grass.</p>



<p>Spring grass is rich in beta-carotene, which imparts an orange tint to the milk produced by the cows.</p>

<p>As a result, cheddar cheese produced during this time is more likely to be white or yellow. Therefore, the color of cheddar cheese can vary between orange and yellow depending on the season.</p>



<p>Interestingly, by the 17th century in England, the orange hue of cheddar cheese was associated with higher quality.</p>

<p>Cheese producers soon began adding color to make cheddar cheese appear more orange. They typically achieved this by incorporating ingredients like saffron, carrot juice, or marigold.</p>

<p>Cheddar cheese had typically always been a farm-made product.</p>



<p>However, when people came over from England to the land that would eventually be known as America, they brought cheddar with them.</p>



<p>Furthermore, they also introduced cheddar-making to the U.S.</p>



<p>All cheese continued to be made on a farm up until 1851 when the Williams family developed the first cheddar factory.</p>



<p>With that being said, America’s main cheddar production is now located in both Wisconsin and Vermont.</p>

<p>The Wisconsin cheddar has typically always been known to be creamier and sweeter when compared to the bitter and sharp taste of Vermont.</p>



<p>However, cheesemakers wanted the color to remain uniform all year round.</p>



<p>To achieve this, the <strong><a href="https://www.formaggiokitchen.com/blog/what-is-annatto-how-does-it-relate-to-cheese/" target="_blank" rel="noopener">food coloring and condiment, annatto</a></strong>, was added to cheddar cheese.</p>



<p>Annatto comes from the seeds of the achiote tree but can also be found in paprika.</p>



<p>The practice of using annatto to color cheddar orange has remained and is still used today.</p>



<p>Annatto won’t affect the flavor or texture of cheddar but simply disguises the color of the cheese.</p>



<p>This was an easy way to ensure that all cheddar cheese produced in America looked the same.</p>

<p>However, when cows eat hay in the winter months, beta-carotene is dramatically reduced.</p>



<p>And it is this that produces a whiter or yellow cheese.</p>

<p>But, even during the original manufacture of cheddar cheese in the UK, it was felt that orange cheddar was a marker for higher quality.</p>



<p>As for cheddar production in America, manufacturers wanted to keep the color uniform all year round, hence the use of annatto.</p>
